Did you know that one of the oldest known Cocktails, The Sazerac, originally used Cognac?
The use of Cognac ended with the Phylloxera epidemic which devastated French vineyards, which meant that Cognac was very difficult to buy, also the prices increased dramatically in that time.
The epidemic, along with the American Civil War, made cognac rather hard to come by, so many bartenders switched the Sazerac recipe to rye whiskey which was still readily available.
